Lamb and Beer Stew

 

 


What do you need

1Kg of lamb chops trimmed of fat

3 carrots

4 medium potatoes

2 medium onions

1 tbsp oil

4tbsp of plain flour

salt and pepper

1 middy of beer (not light)

2 beef stock cubes (OXO)

water (if needed)

fresh rosemary

 

 
How to do it

Toss meat in the flour that has been salt and peppered and shake excess.

Brown the meat well in the hot oiled pan and remove and set aside once browned.

Slice carrots and onions and sautee in the hot oil. 

Add the fresh rosemary and potatos and sautee for 2 mins.  

Add the meat to the pan along with any meat juices.  

Pour the beer and enough water to half fill the pot..  

Add stock cubes and salt and pepper to taste.  

Cover and let simmer on a slow cook about 1hour or when meat is falling of the bones and stew has thickened.
